tonights mix of chicken, steak and a whole chicken for another recipe.

So, how do you try to cook a whole chicken for soup, make a t-bone steak for your hubby and a chicken breast for you??? This is how….. I soaked mesquite wood all day. Once I decided to light the grill, I seasoned all of my meats. Since I did a poll on which recipe that y’all would like to see. here is the chicken recipe. I took a single chicken breast, pounded it w/ a mallet,  and marinated with light caesar dressing(i like ken’s) and a spicy brown mustard. Once that has marinated for about 30 min. I take my fav. spices and season on both sides of the chicken. Once the charcoal is ready, I add the wood. Since I am cooking a whole chicken as well, I added that to the grill first. Once the whole chicken was on for about 1/2 an hour, I added the steak and the chicken. i cooked the chicken for about 8 min. per side. While that was cooking…. i put a tblspn. of I can’t believe its not butter on a skillet with a tablespoon of minced garlic and added a pkg. of mushrooms on med.-low heat until browned. I also made my sinful delight(I don’t care about chocolate.. I love Mac and cheese lol). So, once the steak and the chicken was done , I topped with the mushrooms, placed a side of mac and cheese and some sweet potato fries……. yummy!!!!!!!!!!! and now I have to shred a whole chicken so I can make my cabbage, veggie, chicken soup tomorrow.. lol Happy eating y’all! And what a way to make 3 dishes in one shot! Talk about multitasking~~~~~

Shrimp puffs. AMAZING Brunch!

So, I found this recipe. It is supposed to be an appetizer. But….. I thought BREAKFAST!!!!!!!! I took a muffin tin and placed cupcake liners in each slot. Then I took a can of biscuits.Cut each biscuit in half. Place half of each biscuit in the cupcake liner. Then take 2 small deveined and peeled shrimp and place on the top of the biscuit, then top with as much shredded cheese that you desire. Season with dill or oregano,then place the other half of the biscuit on top. Cook in a 350 degree oven for 20-25 min. or until golden brown. Make an egg over easy and serve on top of the biscuit or on the side. Walllaaaaa! Happy brunch Y’all!

New years eve finger foods

I made a lot of finger foods last night(stay tuned for my yummy shrimp, cheese and egg puffs for breakfast). Most of these recipes are on my blog already! The one that is not on my blog is my chicken wings. Instead of deep-frying, I grill them. I took 2 pkg.s of wings, seasoned them with my fav. seasonings, placed on the grill until cooked(about 15 min. turning frequently). Once the wings are done, place in a bowl and add 1 tablespoon of butter(I use I can’t believe it’s not butter), 1/2 cup of both franks red-hot sauce and your fav. bbq sauce(I like rudys…… it is from Texas). Toss and YUMMY!!!!!!!!!! for the oreo balls… I took a pkg. of oreos w/berry cream filling, crushed them and mixed with softened strawberry cream cheese. Made into balls and dipped in melted white chocolate! OMG sooooo good! Quick and easy! And like I said earlier…. Stay tuned for a twist on breakfast biscuits and gravy. It will have shrimp, cheese and white gravy!

Outbacks Alice springs chicken and Bennigans broc. bites! oh my!

For Bennigans Broccoli bites….

I took a 16 oz. box of frozen broccoli and de-thawed. I mixed that with a bag of shredded cheese, some chopped bacon bits( I used the pre-cooked  bacon, microwaved and chopped. I used half the box), 3 tablespoons of minced onion(sweet), and 2 1/2 tablespoons of flour. Mix that all together and place in the refrigerator for an hour(if you are in a hurry.. freeze for 20 min.). Take 3 eggs and whisk in a bowl. In a separate bowl take a cup of Italian bread crumbs and 1/2 cup of panko bread crumbs and mix together. Take your broccoli mixture and form into balls with your hands, place in the egg wash, then bread crumbs, then into a deep fryer(or oil in a dutch oven). Fry for about 2 min.(or until they are golden), then take out and place on a paper lined plate to drain. Serve with honey mustard.

Bennigans honey mustard

3/4 cup of sour cream(I use greek yogurt)

1/3 cup of mayo

1/ cup of Dijon mustard

1/3 cup honey

1 tblsp. lime juice

Mix all ingredients until smooth and refrigerate

Outbacks Alice springs Chicken:

1 cup Dijon mustard

1 cup honey

1 tsp. lime juice

4-6 boneless chicken breasts

1 pkg of mushrooms

2 tablespoons butter

salt and pepper to taste

8 slices of bacon,cooked

shredded cheese

Outback’s Alice Springs Chicken:

Mix(preferably with an electric mixer) mustard, honey, lemon juice and 1 tbsp of olive oil. Pour 1/2 of the mixture over the chicken in a ziploc bag and place in the fridge for at least 2 hours(but you can marinate overnight). Chill the remaining marinate to serve with the chicken. Once you are ready to start cooking…Spray frying pan w/ cooking spray(I use a cast iron skillet or a cast iron panini press), sear chicken on both sides until cooked(about 8-10 min. Per side). In a separate pan… Melt the butter and saute the mushrooms until golden. Take the cooked chicken, place in an oven safe dish. top each chicken breast with 2 pieces of bacon across each breast, top with mushrooms and shredded cheese. Place in the oven on (low) broil until cheese is melted and golden and sprinkle with parsley!
