I just LOVE cooking! There are no rules or boundaries! Worst thing that can happen is the dish tastes awful! Well, then you never make it again lol! By the way…. Just a hint…. NEVER, NEVER make a dish for the first time during an important occasion!
So, I made a sweet and sour version of chicken and sausage. Then I topped with the left over fried black-eyed pea rice that I made for the new year!!!!!!!!!!!!!! YUMMY~~~~~~~~~~~~
I took 2 chicken breasts, Cut them into chunks and placed them in a large ziploc bag with 2 tablespoons of cornmeal. Shake until all the chicken is coated. Then I placed the chicken and a link of cut sausage in a wok on med-high heat coated with sesame oil. Stir until cooked, then take out and place on a plate. Then I took the juice of a 20 oz. can of pineapple and placed that in a bowl along with 2 tblspns. of cornmeal, 2 tblspns. soy sauce, 2 tblspns. of rice wine vinegar and 1 tblspn. of catsup. mix well. I took a 1/4 bag of frozen veggies, the can of diced pineapple, and 1/2 diced red onion and placed in the wok. Cook until the veggies are done and the pineapple is browned. Add the sauce and chicken/Sausage and mix for about 3 min. Then serve over rice(like I said.. I used my left over black-eyed pea fried rice posted on 1/1/12).
