Healthy fish and chips!!!

This is defiantly a favorite with my husband and I! Take any type of white, flaky fish(like pollock or even tilapia), and cut each fish vertically, then set aside. I cut each fish into 4 strips and I used 3 filets. take 2 bowls. In the first bowl.. 2 egg whites(or 1 whole egg)and whisk. In the second, 3/4 cup of  breadcrumbs (I like Panko b.c they are crispier) and Kellogg’s Cornflake crumbs. Take each strip and place in egg wash, then into the crumbs. Then, the secret to the entire strip being crispy is……… place them on a cooling rack over a baking sheet(you can get cooling racks for less than $5 for a set of 2 at Wal-Mart)! The cooling rack allows for heat to evenly distribute and the bottom will not be soggy 🙂 (this is a great trick for many dishes, and one of my secret weapons.. shhhhh don’t tell hehe) ! Place on the bottom shelf in a 450 degree pre-heated oven. On a second baking sheet place some sweet potato fries( I just used the bagged kind from the freezer section.. not everything has to be homemade. lol pick and choose your battles hehe). I like to line the baking sheet with foil, spray with cooking spray, place the fries on and sprinkle with salt. Place that on the top shelf of the oven.  While that is cooking (about 25-30 min. or until all is crispy), we will make some yummy tartar sauce! Take yet another bowl and mix 1/ 4 cup of low-fat or fat-free Mayo, 2 teaspoons of dill relish, a pinch of dried dill weed and a pinch of  season salt. Mix together and waaaaalllllllaaaaa!!!! You now have a low-fat, low-calorie fish and chips dish! Happy eating ya’ll!
