skillet Chicken w/ garlic linguine & tomato sauce

The first thing that I did was pound out 2 chicken breasts with a mallet(if you don’t have a mallet, you can use a pan). Once the chicken breasts were flattened I cut them in half and seasoned with salt and pepper. Next, take a skillet and add a tblsp. of butter( I use I can’t believe its not butter). Once the butter is melted,add 1/2 sweet onion(diced),  a pkg of mushrooms, 1/2 tsp. Worshtishire Sauce and minced garlic. Saute until golden. Once the mushrooms & onions are golden, add 1 (14.5oz)can of diced tomatoes and 2 tblspns. of your fav. spaghetti sauce. season with a pinch of salt, pepper and oregano to taste. If your tomatoes are a bit tart… add a pinch of sugar to balance the flavor out!

While you are doing your sauce. Take a cast iron skillet and pour about 1 tsp. of olive oil (enough just to cover the surface of the pan). Once the oil is hot, add the chicken. Cook on each side for 8-10 min.

For the pasta: I took 1/3 of a box of whole grain linguine and placed in boiling, salted water. i cooked until aldente(about 8-1 min). drain all of the water(keep 1/3 cup of the startchy water just incase you need to loosen up the sauce). Mix the pasta with 1 tblsp. of butter and 1 tblspn. of minced garlic and lemon zest(or lemon pepper), and toss!

Place some pasta on a plate first. then, top with your chicken breast, tomato mixture, your fav. shredded cheese, AND…(I know you have left overs from the holidays) crispy onions(the ones you top your green bean casserole with)!

And, WAAAAALLLLLLAAAAAAAAAAA! A VERY Yummy meal!!!!!!!!! Happy eating Y’all!

should we bribe children to eat well? I say yes! In bribing them to try new and healthy foods it does two things. 1. it expands their taste pallet and 2. they will never know if they like something unless they try it. What is your opinion?

chicken pot pie

This is a great pot pie with HALF the calories than what is in those frozen ones!!!!!

I took 1 can of 98% fat-free cream of chicken, 1 can of 97% fat-free Hormel chicken and 1/4 bag of frozen mixed veggies(green beans, corn,peas and carrots). Mix together. Preheat the oven to 425 degrees. Then I took a Pillsbury prepared pie crust and a large ramekins. I took the ramekins, turned it upside down and made a cookie cutter out of it. cut the top out and put the rest in the bottom of the ramekins. (This recipe makes 2 pot pies, so you will have to completely round circles for the top and divide the rest into half for the bottom).

Line the bottom of the ramekins with the remaining dough, add your mixture, top with the “cookie cutter” rounds.

Then, take 1 egg in a bowl and only use the egg white. Wash the top of the pot pies with the egg whites. Once that is done, take a knife and make a few slits in the dough. I do mine like a tic tac toe board lol.

Place in the 425 degree oven until dough is browned. 25-30 min.

Healthy fish and chips!!!

This is defiantly a favorite with my husband and I! Take any type of white, flaky fish(like pollock or even tilapia), and cut each fish vertically, then set aside. I cut each fish into 4 strips and I used 3 filets. take 2 bowls. In the first bowl.. 2 egg whites(or 1 whole egg)and whisk. In the second, 3/4 cup of  breadcrumbs (I like Panko b.c they are crispier) and Kellogg’s Cornflake crumbs. Take each strip and place in egg wash, then into the crumbs. Then, the secret to the entire strip being crispy is……… place them on a cooling rack over a baking sheet(you can get cooling racks for less than $5 for a set of 2 at Wal-Mart)! The cooling rack allows for heat to evenly distribute and the bottom will not be soggy 🙂 (this is a great trick for many dishes, and one of my secret weapons.. shhhhh don’t tell hehe) ! Place on the bottom shelf in a 450 degree pre-heated oven. On a second baking sheet place some sweet potato fries( I just used the bagged kind from the freezer section.. not everything has to be homemade. lol pick and choose your battles hehe). I like to line the baking sheet with foil, spray with cooking spray, place the fries on and sprinkle with salt. Place that on the top shelf of the oven.  While that is cooking (about 25-30 min. or until all is crispy), we will make some yummy tartar sauce! Take yet another bowl and mix 1/ 4 cup of low-fat or fat-free Mayo, 2 teaspoons of dill relish, a pinch of dried dill weed and a pinch of  season salt. Mix together and waaaaalllllllaaaaa!!!! You now have a low-fat, low-calorie fish and chips dish! Happy eating ya’ll!
